Best Healthy Brunch and Breakfast Recipes

 





I will be sharing the most delicious, appetizing, and savoury, healthy brunch recipes that would ought one to give it a try. In this post, I'll be adding recipes that I've tried and the recipes which I'll be manufacturing soon. If you liked the recipes which I've posted then give them a shot and feel free for remarks. 

1. Classic French Toast:  

Classic French toast recipe is one of my favourites, and easy to make, whether it is a holiday or lazy morning. Even a beginner can make it, it gets crave-worthy when you add mounds of fresh fruits and dry fruits on top of your choice. 

Recipe:

The ingredients you'll need are:

Eggs and Almond milk- they create a custardy base. If you don't have almond milk, any milk on hand will work. 
Ground cinnamon and cardamom- it adds warm and spiced flavour.
A pinch of sea salt- it accents the sweetness of maple syrup.
Good Bread- any bread of your choice. It would be best if the bread slices are thick. 
Maple syrup or honey- honestly I've never tried maple syrup but once in a lifetime, I'll have a try.

And Fresh fruits or Dry fruits- you can use any fruit in the season. It gives more flavour and colour to it.

2.  Sour Cream Coffee Cake:

This recipe is not only easy to make but is absolutely delicious. You won't be able to stop with just one piece. 

The thing that surprised me was that this recipe doesn't include coffee. Coffee cake is a term given to food that is intended to be eaten with coffee.  

Recipe:

Ingredients required are:

Cream butter and Sugar- add egg, sour cream, and vanilla and mix.
Add dry ingredients- in a separate bowl add ingredients (flour, baking soda, salt, and baking powder) and whisk them, later mix them in the butter mixture and mix until just combined.
Streusel topping- for the topping, place brown sugar, flour, cinnamon, salt, and butter in a bowl and mix them with fingers until they form crumbles, add walnuts if fancy. 
Add 1/2 batter to the pan- spoon half the batter into the greased 8*8 pan and spread it evenly with a knife. Sprinkle 3/4 cup streusel.

Add remaining batter- add the rest of the batter to the pan, spread it and scatter the remaining streusel on top. 

Bake- bake for 45-50 minutes, until a cake tester comes out clean, and let it cool for at least 10-30 minutes.

3.  Cinnamon Rolls:

This cinnamon roll recipe I've added is super easy to bake and tasty at the same time. I predict it would turn out really tasty compared to the store. The recipe is totally vegan you can have your preferred ingredients.

Recipe:

Make dough- whisk the flour, sugar and salt together in a large separate bowl. Since it is a vegan recipe, so it would be dairy-free. We will use coconut oil and almond milk instead of melted butter and cow's milk, and active dry yeast which needs to be soaked in warm water so it forms a bubble before it is added to the dry ingredients. Pour the mixture into the dry ingredients, add the eggs, and stir it. Mix until a soft dough forms. Let the dough rest for about 10 minutes. For an extra productive rise, stick the dough somewhere warm.
Fill the Rolls- After 10 minutes, roll the dough out into a rectangle shape, it does not need to be perfect but the straighter the edges are, the more uniform the cinnamon rolls will be. Brush the rectangle with the coconut oil and mix together the cinnamon and brown sugar. Sprinkle it all over the dough. Roll up the dough, leaving a border around the edges.
Roll the dough- Starting at the short end of the rectangle, roll the dough tightly into a log. Slice it into 12 even rolls. Place them in a large greased baking pan, cut side-up. cover the rolls up and set them aside for one hour.
Bake- Finally, bake the cinnamons roll for 25-30 minutes at 350 degrees, until they are lightly brown. Remove them from the oven and let them cool for at least 10 minutes.

Make the icing- In a medium bowl beat the cream cheese on high speed until smooth and creamy. Add butter, granulated sugar, and vanilla and beat until smooth and combined. Spread the icing over the warm rolls and serve it. 

4.  Shakshouka: 

Shakshouka is a classic North African and Middle Eastern dish that is eaten for breakfast. It's made from simple healthy ingredients. You can serve right from the pan.

Recipe:

Add veggies to the pan on medium heat-Heat olive oil on medium sauté pan on medium heat. Add the chopped bell pepper and onion and cook for 5 minutes or until the onion becomes tender. 
Add the spices-sprinkle garlic and spices (cumin, paprika and red pepper flakes) season with salt and pepper and cook for additional minutes.
Add can tomatoes-Pour the can of tomatoes and its juice into the pan and break down the tomatoes with a large spoon. Season with salt and pepper and bring sauce to a simmer.
Add eggs-Use the large spoon to make small wells in the sauce and crack the eggs into each well. cover the pan and cook for 5-8 minutes or until the eggs are done to your liking.
Garnish- garnish with chopped cilantro and parsley and serve with pita bread.

5.  Yogurt and Fruit Parfaits:

These red, white and blue fruit yoghurt parfaits are great to enjoy all summer long for breakfast, dessert or a snack. Made with fresh berries, Greek yoghurt and granola for an easy treat.

Recipe:

Berries-For the red white and blue presentation, use fresh blueberries and strawberries. You can absolutely use other fruits that you have.
Yogurt-Vanilla Greek yoghurt is used in the recipe but it works well with plain regular yoghurt.
Sugar-To soaks the strawberries, you can use any type of granulated sugar or switch to honey or maple syrup.
Add the strawberries and sugar to a bowl, stir to combine cover and refrigerate for 30 minutes.
Granola-Granola adds a nice crunchy texture. Use your favourite store-bought granola. 

Layer the cups- Place the strawberries into the bottom of the cup. Top with some yoghurt, place blueberries on the top, add on the granola and then repeat the steps.
