1.Street Style Chicken Corn Soup Recipe:
For Stock:
Add generous amount of water in a wok, chicken with bones 500g or more, 1 medium onion, 2-3 green chilies, 3-4 garlic cloves and 1 inch ginger piece. Bring to boil and remove froth. Let it cook on low flame for 2-3 hours.
Now take out chicken and other added ingredients from stock. Separate chicken from bones and add
back to stock. Also some for garnishing.
Mask remaining ingredients except ginger with the back of a fork and add to stock.
stock should be around 8 glasses.
Open a can of corn. Reserve 2-3 tbsp. for garnishing and roughly blend remining corn. Add to stock .
Add Seasonings:
Chicken cubes 2,
Soy sauce 6-8 tbsp.,
Vinegar 4 tbsp.,
chili sauce 5tbsp,
Black Pepper 1 tbsp.,
Red Chili Powder 1/4 tsp,
Sugar 1 tsp,
salt to taste.
Mix 8-10 tbsp. of corn flour in a cup of cold water.
Add in soup while stirring.
Turn the flame low.
Add beaten eggs and let it simmer for few seconds.
Mix after a while.
Add chopped boiled eggs and mix.
You may also add a full boiled egg in each bowl of soup separately.
2.Restaurant style Hot and Sour Soup:
Ingredients:
Chicken Mince/ Finely Chopped 400-500g Marinate with 1 tbsp of Chili sauce,
vinegar,
soy sauce
1/2 tsp black pepper and salt,
Add 2 tbsp. water.
It helps the chicken mince from forming lumps
Cabbage 1 small Cup Chopped,
Carrots 1/2 cup finely chopped,
Spring Onion 1/2 cup Chopped,
Corn Flour 6 tbsp.,
Egg White 2,
6-7 glasses
Seasoning:
Chicken cube 1
soy Sauce 5 tbsp.
Chili Sauce 4 tbsp.,
Vinegar 3 tbsp.,
Sugar 2 tbsp.,
Lemon juice 2 tbsp.,
Salt 1 tbsp.,
1/4 tbsp. of White and Black Pepper,
Red Chili,
Oyster Sauce 1 tbsp.
Method:
1. Boil water in a work. Add marinated chicken mince. Cook for 3-4 min and remove froth.
2. Add the sauce mix. Turn the flame low. Whisk egg whites and add slowly in the work. Let it sit for a min the stir it slowly.
3. Now turn the flame high. Mix Corn Flour in one cup of water. Add sauce mix. Let it cook for a min.
4. Add chopped Veggies and Turn the flame off. The Vegetable remain crunchy. You dont need to over cook them. You may add more sauces or spices before serving.
